Broccoli Cheddar Soup

1 pound broccoli

1 potato

1 onion

1 red bell pepper

3 cloves garlic, minced

2T butter

2T flour

1t cumin

1t salt

1T pepper

1/2t dry mustard

1/2c red, brown or pale ale

6oz cheddar cheese

1c cream, milk or half and half

Caramelize onions.  Add garlic.  Melt butter.  After melted, whisk in flour.  Then add all spices the ale.  Stir in milk and bring to boil and then return to medium low to thicken.  Add in cheese.  Add in 1/3 of the broccoli and the chopped potato.  After it is softened, pulse in blender.  Add in remaining broccoli and ingredients.
