Zucanoes

Zucchini sliced in half                                                                                        

2 garlic cloves, minced

1 onion, chopped                                                                                               

1c tomatoes, chopped

1c chopped mushrooms                                                                                   

1c cooked brown or white rice

1/2t cayenne                                                                                                        

Rosemary, basil, and thyme

1.5c toasted almonds, walnuts, or pecans, if desired                                 

3T lemon juice

1/2c shredded cheddar

Preheat oven to 350. Slice zucchini in half lengthwise. Scoop out insides leaving a ¼” rim. Saute zucchini insides that you scooped out,mushrooms, onion, and garlic. Season with herbs and cayenne. Stir in cooked rice, nuts, lemon juice. Fill zucchini shells and top with cheddar. Bake 30-40mins. Top with fresh tomato.
