Beet Hummus

1/2c almonds or walnuts

2 small beets, roasted until tender, then peeled and grated

2 cloves garlic, chopped

1t cumin

1/4c olive oil

Juice of small lemon

1T Tahini paste

Leaves from several sprigs of parsley, mint, dill minced

Salt and pepper to taste

Place all ingredients in food processor and pulse until mixture becomes a slightly chunky puree. Taste and adjust seasonings if desired. Serve with pita or veggies.
