Broccoli Cheddar Soup

6T butter

1 onion

1/4c flour

2c half and half

3c chicken or vegetable broth/stock

2 bay leaves

1/4t fresh nutmeg

4 cups broccoli

1 red pepper diced or roasted red peppers

12oz amber ale

3c sharp cheddar cheese

salt and pepper to taste

 

Add butter to pan and melt.  Add onion and cook until softened.  Add flour and stir 3-4 mins, whisking often.  Gradually add half and half, whisking constantly.  It will smooth out.  Stir in broth, bay leaves and nutmeg.  Add in half of the broccoli.  After it is cooked through, puree the broccoli.  Add in beer.  Bring back up to temperature and add in cheddar cheese, remaining broccoli, peppers, salt, and pepper.
