Fish Tacos

For fish

2c flour

1.5t baking powder

1/2t dried or fresh oregano

1/2t garlic powder

1/4t cayenne

salt and pepper to tasted

12oz cold beer

3/4c milk

 

1.5lbs fish of your liking

 

Sauce

1/3c mayonnaise

1/4c chopped cilantro

2T lemon or lime juice

4T chipotle pepper

 

To top

2 limes

1 avocado

1/2c chopped cilantro

1/2 head cabbage shredded

corn tortillas

 

Put flour, baking powder, organo, garlic powder, and cayenne into a large bowl and season with salt and pepper.  Add beer and 3T of milk, whisking until smooth.  Cover with plastic wrap and set aside 30 mins.  Pour oil in a pot to a depth of 1.5" and heat on medium high until it reaches 375 degrees.  Cut fish into 2"x1/2" strips.  Dry and season to taste with salt and pepper.  Dip into batter.  Fry in batches, turning to cook both sides  Drain on cooling rack set over a baking sheet.

Blend all sauce ingredients.  Serve tacos!
