Homemade Flour Tortillas

26 oz all purpose flour (approximately 4 1/2 c)

1 T salt

1/4 c lard

2 1/2 c (+/-) water

Yield 24, 6 inch tortillas 

Put flour and salt in mixer. Start mixing. Add in lard, 1T at a time. Gradually add in water. It should be somewhat sticky and wet, but firm. The listed water is approximate, as the amount needed depends on environmental and other conditions. 

Turn dough out onto well-floured surface to finish kneading. It should be soft and pliable. Work on your floured surface surface, forming the portions into balls and then flattening into discs. (Cut into portions, according to desired tortilla size.  2oz - 6inch tortillas, 4oz - 12 inch tortillas.) Then roll each disc out fairly thin. Add flour as needed.

Heat pan, cook on both sides until there are light brownish/black spots. Very little oil/lard is used.
