Red Chili Sauce

2 large tomatoes, rough chop

3/4c beef or vegetable stock

3/4c water

3-6 hot red chilis

1T ground coriander

1T oregano

2T cumin

2T paprika

2 bay leaves

Salt and pepper to taste

Cook all ingredients on high until boiling. Simmer 30 minutes. If using dry chilis, simmer at least 1 hour. Cool just enough to be able to puree using a blender.
