Roasted Beet Salad

1 bunch of beets

1/4c Goat cheese

1 chopped tomato

1 cucumber, sliced

1/4c sunflower seeds

Chopped lettuce or baby lettuce

Boil beets for 5 minutes. Remove from heat. Put into cold waterl, use a spoon to peel the outer skin. Toss in olive oil and salt and pepper and put on a baking sheet. Roast in the oven at 400 for 30mins or until fork tender. Remove, cool, and slice. Toss all salad ingredients in a dressing of your choice and serve.
