Zucchini, Goat Cheese, and Caramelized Onion Tart
1 large or 2 small zucchini
2 cloves garlic, minced
1 onion cut in slices
½ c sharp cheddar
1/2t salt and pepper
2 t olive oil
1 bunch salad turnips or radishes
¼ c goat or blue cheese crumbles
For Dough
1 ¾ c flour
1t sugar
½ t salt
1/2c cold butter cut in pieces
3T shortening or lard
4-5 T ice water

Place flour, sugar, and salt in food processor and combine (or use fork by hand)

Gradually work in butter and combine until butter is in pea-sized chunks

Sprinkle in 3T water and pulse until dough just comes together in your hand. If still dry, add 1T water at a time.

Turn dough onto plastic wrap and press into a disk. Cover and roll into a circle and refrigerate for 15-30 mins. Preheat oven to 400.

Heat pan. Add in onions, coating with oil. Lower heat and cover. Cook covered on low until onions are soft and browned (but not burned) – still occasionally. Add garlic.

Remove dough from refrigerator. Roll out to desired size and spread olive oil, leaing a 1 1/2inch border. Top with onion, garlic, zucchini, cheddar, salt, pepper, and goat cheese crumbles.

Fold over edges of dough. Brush with egg yolk, if desired. Bake until golden brown, aboout 30 mins.

Top with sliced radishes or turnips.
